Trauma, I argue, scrambles time and shreds map. The hero of George Gershwin\u2019s <em>Porgy and Bess<\/em> transits the streets of Charleston in a goat cart. My book in progress\u2014a hybrid work of scholarship and travel writing\u2014offers a roadside history of Southern culture in the slower vehicle of the goat cart. It tarries in Charleston\u2019s Catfish Row, in the suburbs of New Orleans (authorized by film tax credits to play any city), and in serial killers\u2019 dump sites along the Mississippi Gulf Coast.<\/p>\n\n\n\n<p class=\"has-palette-color-10-color has-text-color has-link-color wp-elements-727e9d277ba44a0ebad28380d0b16d88\"><em>The Chef\u2019s Sabbath <\/em>is a memoir of addiction and recovery, organized around a series of Mondays: the day that New Orleans restaurants lock their doors.
